hey friends! I hope this post finds you all healthy and happy during these unpredictable times. Some days are harder than others, but we must all remember to be there for each other.
Rather than publish another post about quarantine or self-isolation, I decided to highlight one of my go-to hobbies lately: food!! I’m sure I’m not in this alone when I say that cooking and eating have been great sources of comfort right now. So, I decided to write a post all about my favorite comforting breakfast that’s super versatile and healthy, too!
If you’ve been on the internet (namely Pinterest and Instagram) at any point in the last few years, you will have probably heard of “overnight oats.” Throw some oats and almond milk together in a bowl, stick it in the fridge, and you have the yummiest go-to breakfast ever! In this post, I’ll show you my favorite “Basic Oats” recipe along with a few of my favorite ways to fancy them up with toppings and add-ins.
BASIC OATS RECIPE
• 1/2 cup oats
• 1 Tbsp chia seeds
• 1 Tbsp honey or maple syrup
• enough almond milk to cover (usually 1/2 to 1 cup)
• generous dash of cinnamon
• small handful of raisins (totally optional, I’m just a huge fan of raisins)
• Tbsp of Almond Butter or Peanut Butter (optional, but adds protein to keep you full!)
Toss everything but the almond milk into a bowl (microwave-safe if you want to microwave it I’m the morning) and then cover with almond milk. Cover the bowl in plastic wrap and stick in the fridge overnight. In the morning you can top it with whatever your heart desires and either eat it cold or warm it up! I told you it was the easiest breakfast ever!
MY FAV WAYS TO MIX IT UP
• Cherry Almond
add fresh smashed cherries (or cherry jam) into basic oat recipe, then top with more fresh cherries, sliced almonds, and a Tbsp of almond butter for protein in the morning. Such a yummy flavor combo if you love fresh cherries as much as me!

• Apple Cinnamon
I grated half an apple and added into the Basic Oats to soak overnight and then in the morning topped my bowl with sliced almonds and half an apple chopped up and cooked down in cinnamon. Super super delicious and such a cozy, comforting breakfast!

• Carrot Cake
Grate/shred a carrot into Basic Oat recipe and add extra cinnamon, a dash of ginger, and a teeny pinch of nutmeg. In the morning, I topped with a Tbsp of almond butter for protein, chopped walnuts, and raw pumpkin seeds. I absolutely adore carrot cake, and this tasted just like it but healthy and perfect for breakfast!

I hope this post can help you all become as in love with oats as I am. I could have them every day for breakfast and never get tired!
